Queen’s former royal chef shares recipe for Her Majesty’s boozy chocolate mousse

In recent months, we've seen a lot of recipes which the Queen is a huge fan of.

Darren McGrady, 58, recently started a YouTube channel where he delights the nation with some tasty treats.

He has over 72,900 subscribers where he shares simple techniques for mastering scones and other desserts in lockdown.

Now the former royal chef, who worked for Her Majesty in the 1990s, has revealed a recipe for a boozy chocolate mousse.

The culinary mastermind said in the video: "It's no secret that the Queen loves chocolate, and the darker the chocolate, the better."

"Here's a delicious chocolate mousse I made for the Queen, at Balmoral and banquets at Buckingham Palace, that you'll ever taste."

He continued: "Light, fluffy, not too sweet and easy to make!

"I think if you polled all over the royal stuff, they'd agree that Balmoral is the favourite estate."

To make the mousse, Darren starts by melting dark chocolate and separating the eggs to stiffen the whites.

Next he whipped cream until stiffened and set aside.

Darren McGrady's ingredients for boozy chocolate mousse

  • 6 ounces dark chocolate
  • 10 fl oz heavy cream
  • 5 egg yolks
  • 5 egg whites
  • 1 tsp instant coffee
  • 2tbs Glenfiddich whiskey or Drambuie whiskey
  • 1tbs boiling water

The chef adds boiling water to instant coffee and then a generous splash of Drambuie whiskey to the mix.

Once the chocolate is melted, he built the mousse by adding coffee and whiskey together, then chucking in the egg yolk.

When everything was mixed, he added the whipped cream and egg whites.

Finally, he left the dessert for three hours to set in the fridge which was later topped with whipped cream and chocolate drizzles.

In another video on his channel, Darren revealed the secret ingredient used for the traditional Scottish shortbread.

He said it was a treat he used to make for Her Majesty when she visited Balmoral Castle in Scotland.
