How to make a classic and not-so-classic Aperol Spritz

The Aperol Spritz is a summer favourite for a reason.

Refreshing and moreish, now that the warm weather is here to stay, we’ve got Aperol Spritzes on the brain.

If you’re looking for a recipe to recreate the classic at home, or something new with a bit of a twist, we’ve got some recipes for you to choose from right here.

Classic Aperol Spritz recipe


  • Prosecco
  • Aperol
  • Soda
  • A slice of orange for each glass
  • Ice


According to the Aperol website, for the perfect Aperol Spritz you should first fill a wine glass with ice.

Then, mix in equal parts Prosecco and Aperol and a dash of soda.

Garnish with a slice of orange and enjoy.

Prosecco Cooler


  • 20ml Aperol
  • 60ml prosecco
  • 40ml sparkling water
  • Lemon and cucumber slices
  • Lemon juice
  • Mint
  • Ice


This one is very similar to the classic Spritz with a sour, minty twist.

Place a slice of lemon, a slice of cucumber, some mint and ice cubes in each glass

Then fill them with the Aperol, prosecco, sparkling water and a splash of lemon juice.

Aperol Spritz Granita


  • 250ml Aperol
  • 2 lemons, juiced
  • 4 mandarin oranges, juiced
  • 250ml Prosecco
  • Lemon slices


Stir Aperol, lemon juice, mandarin orange juice, and prosecco together. 

Pour the mixture into a shallow dish and put it in the freezer for 30 minutes.

Then take the mixture out and stir it up with a fork. Put it back in the freezer and the stirring/freezing process for two hours.

After that, pour the mixture in glasses and garnish with lemon slices.

The Emissary Aperol Spritz


90ml The Emissary Prosecco DOCG
90ml Aperol
30ml cranberry juice


Simply combine all the ingredients in a glass with ice.

Garnish with an orange wedge and a sprig of rosemary, and you’re good to go.
